Vegan Shoyu Ramen with Vegan "Bacon". I never made a vegan ramen so I guess why not now. Vegetable stock only from kombu, shiitake, porcini, dulse, apple, onion, leek, garlic, ginger, carrot and sellery. Aroma oil from infused caramalized onions. Bacon made from sliced and smoked king oyster mushrooms inspired by @kenjilopezalt @seriouseats. Other toppings include king oyster mushroom head sauteed in butter, menma, shiitake, negi and caramelized onion. Mazesoba... Sorry, it's been a while since my last post because of this bad movie called ''corona''. I hope everyone is doing well. After re-organising our lifes I finally had the chance for some positive things, like making this Mazesoba and using a new kind of bowl. So good things can come out bad things. I hope this crisis will bring us more together as human beings and focus on the more important things besides ourselves and re-evaluate the things we normally take for granted. For the first time I used an ohgigatadon bowl (litt. fan shaped bowl) which I received from @apexsk_japanese_tableware Besides design-wise appealing to the eyes it's lovely to work with because of the wide surface area which is suited for a lot of toppings without being over crowded. Check their website, they share some interesting content like different kinda ramen bowls. Mazesoba a.k.a. Taiwanese mazesoba is a Taiwanese inspired 'dry' kind of ramen (aburasoba) where the noodles, instead of being dropped in the soup, are mixed in with only the oil and taré, here mentsuyu sauce, shrimp oil, garlic-negi-ginger aroma oil (chi-yu) and kombu-sencha vinegar. It uses a lot of toppings, here: white onions, red onions, fried onions, negi, chives, raw garlic, nori, marinated minced beef (negi, garlic, ginger, tantanmen taré, gochujang, sugar and soy), turkey bacon, katsuobushi, gyofun and a raw egg yolk.
